This is my favourite of all time! It is smooth and far easier for newbies to drink than anything sin palo, but the flavour is plenty robust, and shares the savouriness of Taragui con palo that I love. It's not too bitter or smoky, and has plenty of polvo for a nice, frothy head and staying power. Pour a little in your hand and you'll see what an expertly blended yerba mate looks like. In my opinion, just the right amount of leaves, stems, and dust to make a really good mate.
This is my standard to drink all by itself, and for variety, Union (that's oon-YON, not YOUN-yin!) melds great with other, stronger blends. My favourite trick is to add a teaspoon or so of a strong sin palo mate (Canarias, Rosamonte, or Taragui sin palo all work great) to a cuia of Union for a a little extra bite and a new spin on an old friend.
